As I step into Koyo Koyo, I am immediately transported to a world beyond the usual Pan Asian dining experience. The vibrant ambiance sets the stage for what promises to be an immersive culinary journey.
By day, the restaurant exudes a fresh and trendy vibe, ideal for relaxed lunches and cosy get-togethers. But as the sun sets, it evolves into a dynamic and lively space, offering an exciting setting for a night out on the town.
The transition from day to night brings a palpable buzz to the air, creating an atmosphere that is both electric and etched in memory. The warm and inviting atmosphere is further enhanced by traditional Asian artworks and soft lighting that sets the mood for a memorable meal.
The menu delights in the diverse flavours of Southeast Asia, offering me a delightful array of Asian classics, from the tantalizing Robata Grill (a first in Chandigarh) specialties to the expertly crafted sushi, paired perfectly with handcrafted cocktails and Shochu. What sets this restaurant apart is the Chef’s dedication to using local and seasonal ingredients, sourced from nearby farms.
While staying true to the authenticity of Southeast Asian cuisine, they also bring in essential sauces to ensure that the flavours remain genuine. Through partnerships with local farms, Koyo Koyo ensures a fresh supply of vegetables and herbs like morning glory, baby bokchoy, Chinese kale, Thai Sweet Basil, Kaffir lime, and lemongrass.
The dining experience here is nothing short of exquisite, where a medley of flavours harmonizes to create a visually stunning feast that seamlessly marries contemporary elegance with classic Asian charm.
From meticulously crafted dim sum to the masterful artistry displayed in their sushi creations, each dish promises to tantalize the palate with a symphony of tastes. Chef’s expertise shines through in his mastery of Japanese culinary techniques, evident in the exquisite sushi platters and robatayaki dishes he presents.
Meanwhile, he also leads diners on a sensory journey through the vibrant and bold flavours of Thai cuisine, showcasing his culinary finesse. From globally renowned selections like Japanese edamame to locally inspired flavours such as homegrown basil and house made Guilin chili paste, the restaurant showcases a dedication to honouring both international traditions and local craftsmanship. I appreciate the restaurant’s commitment to education and adaptation, as they present a variety of dishes from six different Southeast Asian culinary traditions.
